Since our inception, MouCo Cheese Company has been crafting mouthwatering, award-winning cheeses that have delighted taste buds far and wide. Over the years, curd lovers have frequently asked us to add cheese curds to our lineup. However, the equipment needed to create these squeaky delights was quite different from what we use to produce our signature soft-ripened cheeses. As a result, we kept the dream on hold.

Then, one day, a good friend from Minnesota made us an offer we couldn’t refuse. She had a charming cheese vat that needed a new home. Seeing an opportunity to embark on a delicious new journey, we decided to bring it to Colorado. It’s been a flavor-filled adventure! We’re thrilled to finally bring the authentic taste of fresh cheese curds to Colorado, and the response has been nothing short of phenomenal.

Flavors and Aging Information

  • When Fresh: MouCo Cheese Curds are at their squeaky best when just made—mild, creamy, salty, and with a delightful “squeak” that curd lovers cherish.
  • As They Age: As the curds age, the squeakiness gradually diminishes. After about two weeks, they begin to develop a more complex, buttery flavor, with a slight reduction in tanginess. Warming them up can revive some of that original squeakiness, bringing back a bit of their youthful charm.
  • Fully Aged: By four weeks, the curds have evolved into a richer, more cultured cheese experience. The texture becomes denser, and the flavor takes on a deeper, cheddary profile—smooth, soothing, and irresistibly cheesy. Though they’ve lost their squeak, these aged curds offer a comforting, savory bite that’s every bit as satisfying.
