These grilled clams are a delicious and easy appetizer that is perfect for a summer cookout. Ingredients
- 2 slices bacon, coarsely chopped
- 1/2 cup finely chopped green bell pepper
- 1/2 cup finely chopped red bell pepper
- 4 minced cloves garlic
- 1 MouCo ColoRouge
- 1 tablespoon chopped fresh parsley
- 3 dozen medium clams, shucked, bottom shells reserved
- Juice of 1 to 2 lemons
Directions
- In small bowl combine MouCo ColoRouge cheese and parsley.
- In a small skillet cook bacon until crisp. Remove and reserve.
- Add green pepper, red pepper, and garlic to bacon skillet; cook until tender.
- Return bacon to pan; stir to combine.
- Place 1 teaspoon vegetable mixture over each clam in shell.
- Squeeze lemon juice over clams.
- Cover clams with cheese and parsley mixture.
- Chill 1 hour.
- Grill clams open side up in center of the grill for 8-10 minutes.
