Poutine is a delicious and hearty Canadian dish made with French fries, cheese curds, and gravy. Traditionally, the dish features beef gravy, but for a Colorado twist, we’re using our beloved green chili sauce, which adds a spicy and flavorful kick that represents our love for green chili stews. The squeaky, fresh MouCo cheddar cheese curds add a unique texture to poutine, while the rich and tangy green chili ties everything together, creating a dish that is both comforting and exciting.
Ingredients:
For the Green Chili Sauce:
- 1 tablespoon vegetable oil
- 1 pound pork shoulder, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups roasted green chilies, chopped (Hatch or Pueblo chilies are great)
- 1 jalapeño, seeded and chopped (optional for extra heat)
- 3 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
For the Poutine:
- 1 pound French fries
- 1 cup MouCo Cheddar Cheese Curds
- Salt and pepper to taste
Instructions:
- Prepare the Green Chili Sauce:
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the diced pork shoulder and cook until browned on all sides.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the roasted green chilies, jalapeño (if using), chicken broth, ground cumin, and dried oregano.
- Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, until the pork is tender.
- If you prefer a thicker sauce, stir in the cornstarch and water mixture and cook for an additional 5 minutes, until the sauce thickens.
- Season with salt and pepper to taste.
- Prepare the Poutine:
- Preheat oven to 350°F (175°C).
- Arrange the French fries in a single layer on a baking sheet.
- Bake for 15 minutes, or until golden brown and crispy.
- Once the fries are done, transfer them to a serving dish.
- Assemble the Poutine:
- Top the hot French fries with the MouCo cheese curds.
- Ladle the hot green chili sauce over the fries and cheese curds, ensuring the curds begin to soften but not fully melt.
- Season with salt and pepper to taste.
- Serve immediately and enjoy the blend of crispy fries, squeaky curds, and zesty green chili.
