Frequently Asked Questions
🧀 Top 5 Questions
❓ More Questions
🥛 Are MouCo cheeses pasteurized? Are they safe during pregnancy?
👉 Yes — all MouCo cheeses are made with pasteurized milk. In fact, U.S. regulations require pasteurization for soft cheeses like ours. That means our cheeses are generally considered safe to enjoy during pregnancy — though if you have any health concerns, it’s always best to check with your doctor.
❄️ How should I store MouCo cheeses, and how long do they last?
👉 Keep MouCo cheeses in the refrigerator, ideally wrapped in their original paper or in wax/parchment (not airtight plastic, which can suffocate the rind). Unopened, they’ll keep for about 3 months — check the date code on the package. Once opened, plan to enjoy within about a week for best flavor and texture. A little surface mold on the rind can be trimmed off, but if the interior develops mold or a strong ammonia smell, it’s past its prime
💡 Tip: For the creamiest bite, let your cheese rest at room temperature for ~30 minutes before serving.
🚚 Do you ship MouCo cheeses, and how do you keep them fresh?
👉 Yes — we ship within the U.S. in insulated boxes with frozen gel packs so your cheese stays cold and arrives fresh. Orders usually ship early in the week to avoid weekend delays. We don’t ship internationally just yet — but anywhere in the U.S., we’ll get MouCo to your doorstep in great condition.
💡 Tip: Pop your cheese in the fridge when it arrives, then bring it out ~30 minutes before serving for the best flavor.
🥛 Can lactose-intolerant people eat MouCo cheeses?
👉 Many people who are lactose-intolerant can enjoy our cheeses. During cheesemaking, cultures consume most of the lactose, and the longer a cheese ages, the less remains. Our soft-ripened cheeses are naturally very low in lactose, though if you’re highly sensitive, it’s always best to check with your doctor first.
💡 Tip: Try a small portion to start — you may be surprised at how gentle soft-ripened cheese can be.
🍂 Is the rind edible?
👉 Yes — the rind is natural, safe to eat, and part of the flavor journey. Some people love the earthy, mushroomy notes it adds, while others prefer to leave it aside. It’s completely up to your taste.
🛒 Where can I buy MouCo Cheese?
👉 You’ll find MouCo at most King Soopers, City Market, and Whole Foods Market stores in Colorado. We also partner with restaurants across the state, from cozy mountain towns to Denver dining spots. And if you’re traveling, keep an eye out — MouCo sometimes appears on menus in resorts and restaurants nationwide.

💉 Are the cows treated with antibiotics?
👉 Only if they’re sick — never as a routine practice. And milk from treated cows never goes into MouCo cheeses. In fact, milk with antibiotics wouldn’t even allow our cultures to do their job, so no cheese could be made from it.
🧬 What type of rennet do you use?
👉 We use traditional 100% natural, non-GMO veal rennet in our cheeses.
🌿 Do your cows get rBST or other growth hormones?
👉 Nope. Our cows are never treated with rBST (synthetic growth hormones). Keeping them hormone-free helps ensure their well-being — and keeps our milk pure and consistent for cheesemaking.
🥛 Where does MouCo get its milk?
👉 All of our milk comes from a family dairy just 20 minutes from our cheesery in Fort Collins. Staying that close means it’s always fresh, and we can work hand-in-hand with the farmers to keep every wheel of MouCo consistent from the start.
🐄 What do the cows eat?
👉 Our cows eat a balanced mix of grains and forages. Colorado’s dry mountain climate makes year-round grazing impossible, so this diet keeps them healthy and the milk consistent — which means MouCo cheese is consistent too.
🍃 Is MouCo cheese organic?
👉 No — we’re not certified organic.
🌾 Is MouCo cheese gluten free?
👉 Yes — all of our cheeses are naturally gluten free.
❄️ How should I store MouCo cheeses at home?
👉 Keep your cheeses in the fridge, ideally wrapped in their original paper or in wax/parchment (check the date code for expiration) — not airtight plastic, which can suffocate the rind. Once opened, rewrap in the paper the cheese came in and plan to enjoy within a week for the best flavor and texture.
🧀 Can I freeze MouCo cheeses?
👉 We don’t recommend it. Freezing changes the rind and texture, often making the cheese crumbly. Unopened, our cheeses already keep about 3 months in the fridge, so freezing usually isn’t needed.
📦 What if my order arrives damaged?
👉 If your order arrives damaged, please take photos of the shipping box and the cheese right away. You’ll need to file a claim with UPS: ups.com/claims. If you need any details from us to support your claim, just reach out with your order number — we’ll be glad to help.
🎁 Can I send MouCo as a gift?
👉 Absolutely! Cheese makes a great gift. Just place your order online and enter the recipient’s shipping address at checkout. If you’d like to include a gift note, add it in the order comments and we’ll print it on the packing slip.
📜 What does “MouCo” mean?
👉 “Mou” nods to the mountains (and yes, it’s pronounced like “moo” because we make cheese from cow’s milk). “Co” stands for Colorado — and is pronounced like “oh,” as in "Oh my! That’s good!"
🍴 How can I use MouCo cheeses?
👉 MouCo cheeses are made to be versatile — enjoy them simply with bread or crackers, melt them into pasta, fold into omelets, or top your favorite burger. You’ll also find recipe ideas in our online Cookbook for everything from appetizers to comfort food.
💡 Tip: Let the cheese come to room temp before serving — it brings out the best texture and flavor.
