Our signature soft-ripened cheese has been at the heart of MouCo since 2001. Rooted in Bavarian traditions passed down through Birgit and her father, and reimagined with the bold spirit of Colorado, it blends old-world craftsmanship with fresh, local character.

When we started, soft-ripened cheeses like Brie and Camembert were almost invisible in the U.S. market. Choosing Camembert as our first wheel was natural: creamy, nuanced, and never in a rush to reveal its secrets. It taught us how to blend European tradition with Colorado milk and intention—setting the foundation for every award-winning wheel we’ve made since.
