First conjured in 2019, MouCo Boo® is our Halloween-season cheese with a bold streak. Its vibrant orange center and natural black-and-white rind turn heads—but the flavor is just as spellbinding. Tangy at first, it softens into a rich, creamy texture with earthy depth and a hint of sweetness as it matures. Made from pasteurized cow’s milk and crafted with care in Colorado, Boo® brings both drama and delight to any fall cheese board.

Flavors and Aging Information

  • When Young (0–3 weeks): Firm with a smooth, tangy center. Clean dairy flavors shine against the dramatic rind.
  • As it Ages (3–6 weeks): The paste begins to soften and slump slightly. Subtle sweetness and earthy notes develop.
  • Fully Aged (6–8 weeks): Soft, rich, and gooey. The flavor deepens with mellow funk and a lingering finish.

🧀 What This Cheese Had to Become...

MouCo Boo® wasn’t so much developed as it was summoned. Legend (aka Birgit) tells us it was first created in the catacombs under Paris by skeletons with excellent taste and questionable sanitation practices.

In reality, Boo® took shape when we began experimenting with washed-rind cheeses and discovered that annatto—a natural colorant—dulls the senses of certain microbes, softening their usual activity and giving the cheese its pillowy, almost eerie texture. It’s also finished with a light dusting of ash, adding to its haunting appearance and helping the surface ripen just right.

Washed repeatedly in microbial brews from bubbling cheesemaker cauldrons, Boo® became something bold, creamy, and hard to forget. A cheese for mortals—but beloved by skeletons.

Flavors & Aging Information

When Young

(0-3 weeks)

Fresh Boo® has a firmer texture with a gentle tang. The rind is just beginning to form, and the flavor is mild with subtle earthiness and a whisper of funk waiting in the wings.

Developing Complexity

(3-7 weeks)

As the rind develops its signature orange-and-ash glow, the paste softens into a creamy, rich interior. The flavor deepens, bringing savory, buttery notes with just enough washed-rind funk to make things interesting.

At Peak Maturity 

(7-8 weeks):

Fully ripened Boo® is soft, luscious, and spreadable. The rind is bloomy and aromatic, while the interior delivers a full, savory flavor with earthy undertones and a satisfying finish that lingers—like the memory of a really good séance.
