🧀 What This Cheese Had to Become...

Truffello started with a suggestion from a chef—and at first, we used both real truffles and truffle oils to boost the aroma. But over time, it became clear that the oils were holding the cheese back.

So we made a shift. No more oils, no essences—just real Italian black truffles. We've been working with the same truffle supplier for over 10 years now, and the difference shows.

What emerged is a cheese that doesn’t chase after truffle flavor—it starts with it. Deep, earthy, and entirely real.

Developing Complexity

(3-7 weeks)

As the cheese ripens, it softens and deepens in flavor, with the truffles infusing the buttery characteristics, adding an exquisite layer of complexity.

At Peak Maturity 

(7-8 weeks):

MouCo Truffle Camembert reaches its peak at 7-8 weeks. At this stage, the cheese offers a luxurious, velvety texture that may begin to flow at room temperature, releasing a harmonious blend of rich, earthy truffle aroma and deeply savory, nutty flavors.
