MouCo is short for Mountain Cow — a nod to Colorado, where our cheese is made, and to the cows whose milk starts it all. It reflects who we are: a Colorado cheesery built around good milk, good people, and slow, traditional cheesemaking.
You’ll see MouCo across everything we make — Camembert, ColoRouge, Ashley, Truffello, and our cheese curds. Different styles, same heart behind them.
