Layers of savory meat sauce and tender noodles, baked under melty MouCo ColoRouge—Colorado comfort food that’s bold, hearty, and oh-so-cheesy.
🧂 Ingredients
Serves ~6–8
1 lb ground beef or Italian sausage
1 medium onion, diced
3 cloves garlic, minced
24 oz marinara or pasta sauce
9 lasagna noodles (no‑boil or cooked per package)
8 oz MouCo ColoRouge, sliced or shredded
1 cup ricotta or cottage cheese (optional)
1 egg (optional, for ricotta mix)
1 tsp dried oregano
Salt & pepper, to taste
Fresh basil or parsley (for garnish)
👣 Instructions
Preheat oven to 375°F (190 °C).
In a skillet, sauté onion until translucent. Add garlic and cook 1 minute. Brown beef, drain fat, then stir in marinara and oregano. Simmer 5–7 minutes; season to taste.
If using ricotta, mix it with egg, salt, and pepper in a bowl.
Spread a little sauce in a 9×13 dish. Layer with noodles, sauce, half the ColoRouge, and part of the ricotta mix. Repeat layers, finishing with noodles, sauce, and remaining ColoRouge on top.
Cover with foil and bake 25 minutes. Remove foil and bake another 15 minutes until bubbly and golden.
Let rest 10 minutes, then slice and garnish with basil or parsley.
