How did this recipe come about? Well...

In the summer of 2023, Japan saw an unexpected surge in the popularity of a bold new dessert: green peppercorn Camembert ice cream. As Nikkei Asia reported, “the combination of creamy Camembert and the piquant kick of green peppercorns created a sensation among Japanese dessert aficionados.” Inspired by that culinary wave, we crafted our own version—using MouCo PepBert, known for its creamy texture, savory depth, and the subtle citrus-like heat of green peppercorns.

The result? A vibrant, flavorful, totally unexpected ice cream for culinary explorers.

🧂 Ingredients

Makes ~1 quart

    • 1 cup whole milk
    • 2 cups heavy cream
    • 3/4 cup granulated sugar
    • 4 large egg yolks
    • 1 package MouCo PepBert cheese, finely cubed (approx. 4–6 oz)
    • 1 teaspoon crushed green peppercorns
    • 1 teaspoon vanilla extract

👣 Instructions

    1. Make the Base: Heat the milk, 1 cup of the cream, and the sugar in a saucepan over medium heat until the sugar dissolves.
    2. Temper the Yolks: In a separate bowl, whisk the egg yolks. Gradually pour in some of the warm milk mixture, whisking constantly. Then pour yolk mixture back into the saucepan.
    3. Cook the Custard: Stir over low heat until thick enough to coat the back of a spoon. Do not boil.
    4. Add Cheese & Flavor: Remove from heat. Stir in MouCo PepBert cubes until fully melted. Add crushed green peppercorns and vanilla.
    5. Chill the Mixture: Strain through a fine sieve into a bowl. Stir in the remaining cup of cream. Chill thoroughly—at least 4 hours or overnight.
    6. Churn & Freeze: Churn in an ice cream maker according to the manufacturer’s instructions. Transfer to a container and freeze until firm.
