Makes ~ 8 biscuits

- 2 cups (240g) all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 cup (1 stick / 113g) cold unsalted butter, cubed
- 3/4 cup (180ml) cold buttermilk
- 1/2 round MouCo ColoRouge, cut into small chunks
- Optional: melted butter for brushing tops

- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- Cut in cold butter using a pastry cutter or fingers until pea-sized crumbs form.
- Add buttermilk and stir until dough just comes together. Fold in ColoRouge chunks.
- Turn dough out onto a floured surface. Pat into a 1-inch thick slab and cut with a biscuit cutter.
- Place biscuits on sheet, brush with melted butter if desired.
- Bake 12–15 minutes until golden and puffed. Serve warm.
